Ingredients:
- 2 tbsp cornstarch
- 2 tsp sugar
- 6 tbsp soy sauce
- ¼ cup water
- 1 pound boneless beef steak, cut into thin strips
- ½ pound mushrooms
- 3 cups broccoli florets
- 2 medium carrots, thinly sliced
- 2 onion
- 2 tbsp vegetable oil, divided
- 1 (8 ounce) can sliced water chestnuts, not drained, if desired

In a bowl, combine cornstarch, sugar, soy sauce and water until smooth.
Add beef and toss until well coated; set aside. In a large skillet, stir-fry mushrooms, broccoli, carrots, and onion in 1 tbsp oil for 1 min..
Stir in water chestnuts if desired. Cover and simmer for 4 min.; remove and keep warm.
In the same skillet, stir-fry beef in remaining oil until meat reaches desired tenderness.
