Ingredients:
- 2 quarts soymilk
- 4 inch piece fresh ginger root - peeled, sliced and crushed
- 1 ½ tbsp whole cardamom, coarsely crushed
- 1 tbsp whole cloves, coarsely crushed
- 1 cinnamon stick
- 2 tbsp brown sugar
- 1 tsp ground fennel seeds
Steps:
In a saucepan over high heat, bring the soymilk to a boil, then reduce heat to medium.
Stir in the ginger, cardamom, cloves, cinnamon and ground fennel. Simmer for 15 min., stirring occasionally.
Sweeten the taste with brown sugar.
Strain the mixture into another pot. Serve hot.
